Ingredients:

  • 6 large eggs
  • ½ tsp. cream of tartar
  • ¼ cup butter
  • 1 ½ cup almond flour, finely ground
  • 1 Tbsp. baking powder
  • ¼ tsp. salt
  • ½ tsp. xanthan gum (optional - helps to keep bread from crumbling)

Directions:

  1. Preheat oven to 375°F.
  2. Line a loaf pan with parchment paper.
  3. Separate egg whites and egg yolks.
  4. In a large bowl, combine egg whites and cream of tartar. Using a mixer, whip until stiff peaks form.
  5. In a seperate large bowl, beat the egg yolks with melted butter (cooled), almond flour, baking powder and salt. Optional: Add the xanthan gum to this mixture.
  6. Gently fold in 1/3 of the egg white mixture until fully incorporated. Repeat with remaining egg whites.
  7. Pour batter into a loaf pan and bake for 30 minutes until the top is slightly golden brown. A toothpick should come out clean when inserted.
  8. Let the bread cool for about 10 minutes before cutting into 12 equal slices.
