Ingredients:

  • 4 medium zucchini, cut lengthwise into wedges
  • 16 slices regular bacon (not thick cut)
  • 1 tsp. salt
  • 1 tsp. pepper

Directions:

  1. Preheat oven to 425°F and line a baking sheet with foil.
  2. Season each zucchini wedge with salt and pepper.
  3. Wrap each zucchini wedge in bacon and place on the baking sheet.
  4. Bake until the bacon is cooked through and crispy, about 35 minutes.
