Ingredients:

  • 1/4 cup baby spinach leaves
  • 1/4 cup asparagus, steamed
  • 1/4 cup chopped broccoli, steamed
  • 3 slices of yellow tomato
  • 1/4 cup summer squash, steamed
  • 1 Tbsp. parsley
  • drizzle of olive oil
  • 4 tsp. ricotta cheese
  • 2 tsp. shredded mozzarella
  • 1 whole wheat or low-carb flatbread

Directions:

  1. Steam asparagus, broccoli and summer squash.
  2. Top flatbread with spinach leaves, asparagus, broccoli, summer squash, tomato and parsley.
  3. Drizzle olive oil on top of ingredients and sprinkle flatbread with shredded mozzarella and ricotta cheese.
  4. Cook flatbread for about five minutes, until golden brown.
