Ingredients:

  • 1 lb. medium cooked shrimp, peeled and deveined
  • 1 can (14-19 oz.) black beans, rinsed and drained
  • 1 jicama, peeled and julienned (about 1 1/2 cups)
  • 1 ripe papaya, peeled, halved, seeded and chopped
  • 2 kiwifruit, peeled and sliced
  • 1/2 medium red onion, thinly sliced
  • 1/2 cup chopped fresh cilantro leaves
  • 1/4 cup extra virgin olive oil

Directions:

  1. On serving plates, arrange the shrimp, beans, jicama, papaya, kiwifruit, onion and cilantro. Drizzle with the oil.
