Ingredients:

  • 1 tsp. avocado oil
  • 3 large eggs, lightly beaten
  • 1 oz. smoked salmon, sliced
  • 1 oz. reduced-fat cream cheese, cut into 1/4-inch pieces
  • 1 Tbsp. onions, diced
  • Sea salt and black pepper, to taste

Directions:

  1. Heat avocado oil in a nonstick skillet over medium-high heat for 1 to 2 minutes.
  2. Add eggs to the pan and allow to set, about 10 seconds.
  3. Sprinkle salmon, cream cheese and chives over the eggs.
  4. Scramble until just cooked, about 1 minute.
  5. Season to taste with sea salt and black pepper. Serve hot.
