  • 1 Protein
  • 1 Vegetables

Ingredients:

  • 1 ½ lbs. of shrimp, peeled and deveined
  • 1 (14.4-oz.) bag of frozen peppers and onions
  • 1 ½ Tbsp. avocado oil
  • ¼ tsp. salt
  • 1 packet of fajita seasoning blend, no sugar added
  • lime juice, to taste
  • 2 Tbsp. fresh cilantro
  • 12 large romaine leaves

Directions:

  1. Preheat oven to 450 F and spray baking sheet with nonstick cooking spray.
  2. Mix together shrimp, frozen vegetables and seasoning packet in a large bowl.
  3. Pour contents of the large bowl across baking sheet and spread for even cooking.
  4. Cook for about 8 minutes. Switch oven to broil and cook for about 2 more minutes or until the shrimp is fully cooked.
  5. Remove from oven and drizzle with lime juice. Garnish with fresh cilantro and serve over romaine.
