- 1 Healthy Fat
- 1 Protein
- 1 Vegetables
- 1 ½ lbs. of shrimp, peeled and deveined
- 1 (14.4-oz.) bag of frozen peppers and onions
- 1 ½ Tbsp. avocado oil
- ¼ tsp. salt
- 1 packet of fajita seasoning blend, no sugar added
- lime juice, to taste
- 2 Tbsp. fresh cilantro
- 12 large romaine leaves
- Preheat oven to 450 F and spray baking sheet with nonstick cooking spray.
- Mix together shrimp, frozen vegetables and seasoning packet in a large bowl.
- Pour contents of the large bowl across baking sheet and spread for even cooking.
- Cook for about 8 minutes. Switch oven to broil and cook for about 2 more minutes or until the shrimp is fully cooked.
- Remove from oven and drizzle with lime juice. Garnish with fresh cilantro and serve over romaine.
