Ingredients:
- 1 Tbsp. avocado oil
- 1 small onion, chopped
- 3 celery stalks, diced
- 2 garlic cloves, minced
- 2 tsp. onion powder
- 2 tsp. garlic powder
- 5 cups chicken bone broth
- 1 ½ lb. boneless, skinless chicken breasts, cut into 2-inch strips
- 2 cups diced tomatoes
- Sea salt and pepper, to taste
Directions:
- Heat the avocado oil in a large saucepan over medium heat.
- Add the onion, celery and minced garlic. Cook for about 5 minutes until the vegetables are tender, stirring often.
- Stir in the onion powder and garlic powder. Continue cooking for 30 more seconds.
- Add broth, increase heat to high and bring to a rapid simmer.
- Add chicken and cook until no longer pink, about 3 minutes.
- Stir in tomatoes and bring back to a simmer. Season with salt and pepper to taste. Serve hot.
