Here’s something you don’t hear every day: Change is good. Yet that’s Nicole Ballantine’s new motto after dropping 35 pounds on her weight loss journey with the South Beach Diet*.
“I’m more confident in every aspect of my life because of the South Beach Diet. I love myself all over again,” she says. “It taught me to not be afraid of change, change is good. I realized the unknown is okay and life is better on the healthy side!”
A year ago, you wouldn’t recognize the happy-go-lucky, active person Nicole is today. “When I decided to do the South Beach Diet, I was hopeless,” she says. “I felt like I had tried it all but I battled with myself at the end of the day. I lacked self-control and didn’t know how to fix the problem.”
Nicole knew she needed to lose weight. Thanks to the South Beach Diet’s easy-to-follow program and support, she did. “I feel amazing,” she says. “I fell in love with myself and I want to keep this feeling. If that means working out (which I grew to love) or eating to live, I’m all for it!”
The South Beach Diet taught Nicole how to eat. “And I wasn’t starving,” she says. “In fact, I ate so much!” Nicole’s go-to meal was salad because there are many ways to make it and it’s an easy way to get in greens. She added garlic to her meals for extra flavor and loved making grilled squash with garlic and pepper. Nicole’s tip for getting in her water is to “drink it anytime you are hungry and as much as you can.”

Nicole’s advice for someone in Phase 1 is to stick to it because the results will be motivating when you enter Phase 2. Nicole lost nine pounds in her first two weeks*. When you enter Phase 2, Nicole says, “don’t get carb happy” and to remember how good you felt in Phase 1. When Phase 3 arrives, it’s smooth sailing. “You’ve got through the first two phases, trust yourself,” Nicole adds. “Balance is key.”
Nicole’s favorite South Beach Diet meals were the Chockful of Veggie Chili and the Dark Chocolate Nut Bar. Her favorite grocery store snacks were cashews and avocados. Nicole recommends always keeping snacks on you and to “never allow yourself to get hungry.”
When Nicole found herself going off track with the program, she reminded herself of her weigh-ins. She knew that she only wanted to get better and not go backwards. Nicole kept pushing and never gave up.
“I’m happy, healthy and fit. South Beach Diet made me more comfortable with the parts of me that are imperfect.”
Nicole’s advice to anyone feeling frustrated by a weight loss plateau is that “it happens to everyone. Keep pushing. The weight took years to come on and it won’t go away overnight.” She says that the South Beach Diet has taught her how to eat for life. “It taught me that I’m not hopeless and I can do whatever I put my mind to! ”
