The singer, songwriter, reality TV star, entrepreneur and author is also a mother of two, so quick and easy dinner recipes are essential to her healthy lifestyle. She shares one of her favorite homemade meals that can be prepared in just 15 minutes! This sheet pan dinner from her new cookbook is packed with protein, high in fiber and perfect for your busy weeknights.

“Y’all know I love to cook! Here’s a healthy, South Beach Diet-approved recipe I make when I am not getting their delicious foods delivered right to my door,” says Jessie.

If you’re craving a hearty, homestyle meal but don’t have much time to spend in the kitchen, sheet pan recipes are your healthy eating solution! For this easy meal, all you have to do is chop up your ingredients, pour them onto a pan and throw them in the oven. It’s a simple, smart and satisfying meal that you’ll want to make again and again.

This sheet pan recipe is extremely versatile and you can easily switch up the ingredients as needed! Add some variety to your low-carb menu by making it with chicken or turkey sausage one week, then beef or pork the following week. You can also feel free to get creative and throw in some other non-starchy vegetables that you enjoy. Jessie says that Brussels sprouts could be a delicious addition. However, you can also incorporate whole cherry tomatoes, sliced bell peppers or even mushrooms depending on what you have on hand.

According to Jessie, any potatoes could work with this recipe. Sweet potatoes would be a perfect swap! Please note that the potatoes are optional and we recommend omitting them if you are in your weight loss phase of the South Beach Diet program. Without the potatoes, this recipes counts as two Proteins, one Vegetable and half of a Healthy Fat on the South Beach Diet plan.   • 2 cups sliced pre-cooked sausage
  • 2 cups green beans
  • 2 cups small broccoli florets
  • 1 cup sliced red onion
  • 2 cups sliced potatoes (optional)
  • 2 Tbsp. olive oil
  • 1 tsp. Italian seasoning
  • Salt and pepper, to taste


  1. Preheat oven to 400°F.
  2. Place all ingredients into a large bowl and mix until well combined.
  3. Pour the ingredients onto a sheet pan lined with parchment paper. Spread it out into an even layer.
  4. Bake for 15 minutes.
